Chicken And Rice Soup Recipe

Ingredients
  • 1 tsp dried thyme .
  • 4 c collard greens, thick stems removed, sliced .
  • 3 bouillon cubes .
  • 1 (2 lb) rotisserie-cooked chicken, quartered .
  • 1 tbsp canola oil .
  • 2 bay leaves .
  • 5 (14 1/2 oz) cans fat-free low-sodium chicken broth .
  • salt, to taste .
  • 1 large onion, sliced .
  • 1 1/2 c carrots, cut into 3/4 inch pieces .
  • 1/4 tsp pepper .
  • 1 1/2 c celery, sliced .
  • 1 tsp parsley .
  • 1 1/2 c brown rice

Directions
  • Step #1 Cook rice according to package directions; reserve.
  • Step #2 In large pot, mix chicken pieces, over high heat, broth & 3 1/3 c water.
  • Step #3 Bring to a boil, reduce heat to medium; cook 25-30 mins.
  • Step #4 Strain broth, cool slightly.
  • Step #5 Discard bones & reserve chicken meat & broth.
  • Step #6 In same pot, heat oil over medium-high heat.
  • Step #7 Add onion, parsley & salt; cook this until softened, pepper, thyme, 3 mins.
  • Step #8 Add carrots, celery & reserved broth; bring to a boil.
  • Step #9 Add bouillon cubes.
  • Step #10 Bring to a boil.
  • Step #11 Over medium heat, cook 10 mins.
  • Step #12 Add chicken & collards; cook this until vegetables are tender, 10 mins.
  • Step #13 Stir in rice.
  • Step #14 Note: You can stir in the 4 c cooked noodles into broth instead of rice, if desired.
