Heritage Pork Roast (crock Pot) Recipe

Ingredients
  • 1 tsp brown sugar .
  • 1/2 c apple juice or apple cider .
  • 3 medium onions, sliced & separated into rings .
  • 1 1/2 lbs sweet potatoes, peeled & sliced 1 inch thick .
  • 4 medium apples, peeled, cored & sliced .
  • 1/4 c cold water .
  • 2 tbsps cornstarch .
  • 1/4 tsp black pepper .
  • 4 fresh sage leaves, snipped or 1/8 tsp dried sage .
  • 1 tsp Dijon mustard .
  • 1 (2 lb) center cut pork roast, trimmed of fat

Directions
  • Step #1 Pour the apple juice into the crock pot.
  • Step #2 Then layer the sweet potatoes, onions & apples in the crock pot.
  • Step #3 In a nonstick skillet, brown the pork on all sides over medium-high heat.
  • Step #4 Place the pork on top of the potato & apple slices.
  • Step #5 Brush the mustard over the roast & sprinkle the roast with the pepper & sage.
  • Step #6 Cover up & cook on LOW until the roast is done & registers 165°F (73.
  • Step #7 9°C) on a quick reading meat thermometer, 7 to 9 hrs.
  • Step #8 Transfer the roast to a platter & keep it warm.
  • Step #9 Using a slotted spoon, transfer the apple-sweet potato mixture to a bowl & keep it warm.
  • Step #10 Combine the water, sugar & cornstarch in a measuring c.
  • Step #11 Stir the cornstarch mixture into the juices in the crock pot & cook on high, stirring often, until they thicken, 1 to 2 mins.
  • Step #12 Serve gravy over the roast & apple-potato mixture.
