Coconut Pound Cake Recipe

Ingredients
  • 1 3/4 tsps baking powder .
  • 1/2 tsp salt .
  • 2 tsps coconut extract .
  • 4 eggs .
  • 2 tbsps sugar .
  • 14 tbsps butter, softened .
  • 2 tbsps water .
  • 2 3/4 c flour .
  • 1 1/4 c sugar .
  • 1 c coconut milk

Directions
  • Step #1 Preheat oven to 350-degrees F.
  • Step #2 Grease & flour bundt pan.
  • Step #3 In a large mixing bowl & electric beaters beat sugar & butter until light.
  • Step #4 Add eggs & mix until light & lemon colored (5 mins).
  • Step #5 Add coconut milk, water & extract, mix well to mix.
  • Step #6 Add dry ingredients (flour - salt), mix well to mix.
  • Step #7 Continue beating on medium for 2 mins.
  • Step #8 Spoon into prepared pan.
  • Step #9 Bake for 55-65 mins or until toothpick inserted in center comes out clean.
  • Step #10 Cool cake in pan for 10 mins & then remove cake from pan & finish cooling on rack.
  • Step #11 Delicious served with whipped cream & toasted coconut.
