Lime Ginger Butter Cookies Recipe

Ingredients
  • 1 tsp water .
  • GLAZE .
  • 1-2 drop food coloring, yellow & green (optional) .
  • 1 tsp lime zest, grated .
  • 2 c cake flour .
  • 1/2 tsp baking powder .
  • 1/2 c granulated sugar .
  • 1/2 c unsalted butter .
  • 1 c confectioners' sugar .
  • 1 1/2 tsps ground ginger .
  • 1 tsp lime zest, grated .
  • 3 tsps fresh lime juice .
  • 1/4 c frozen limeade concentrate, thawed

Directions
  • Step #1 To prepare the cookies, whisk together the first three dry ingredients in a small bowl, set aside.
  • Step #2 With an electric mixer on medium speed, beat the butter & granulated sugar in a mixing bowl until fluffy.
  • Step #3 Beat in the limeade concentrate the lime zest.
  • Step #4 Reduce the speed to low & mix in the flour mixture, beating until just incorporated.
  • Step #5 Divide the dough in half; roll each half into a ball & flatten to a disk.
  • Step #6 Wrap in plastic wrap & put in the fridge until firm, about 2 hrs over overnight.
  • Step #7 When ready to bake, preheat the oven to 350 degrees F.
  • Step #8 Spray 2 baking sheets with nonstick spray or line with parchment paper.
  • Step #9 Divide dough disk into 24 tbsp sized pieces.
  • Step #10 Roll each into a ball & place 2 inches apart on the baking sheets.
  • Step #11 Use the bottom of a glass to flatten the balls into 2-inch rounds.
  • Step #12 Refrigerate for 15 mins.
  • Step #13 Bake, rotating the baking sheets halfway through, until the cookies just beginning to turn golden around the edges, 10-12 mins.
  • Step #14 Cool completely on a rack.
  • Step #15 Let the baking sheets cool, then repeat with the remaining dough.
  • Step #16 To prepare the glaze: mix the confectioner's sugar, if necessary, in a small bowl; stir, & food coloring, adding a little more water, if using, the water, lime zest & juice, to make a smooth glaze.
  • Step #17 Spread a thin layer onto each cookie.
  • Step #18 Let stand 15 mins to allow the glaze to set.
