Creamy Macaroni And Cheese Recipe

Ingredients
  • 1 tbsp salt
  • 1/2 c grated Parmesan cheese
  • 1 lb elbow, shell or other bite-size shaped pasta
  • Freshly ground black pepper
  • 1 1/2 tbsps Dijon mustard
  • 1/3 c flour
  • 2 (12 fluid oz) cans evaporated milk
  • 3 tbsps butter
  • 1 c chicken broth
  • 1 lb grated extra-sharp cheddar cheese

Directions
  • Step #1 Bring 2 quarts of water to boil in large soup kettle.
  • Step #2 Add salt & pasta.
  • Step #3 Using package directions as a guide, cook this until al dente.
  • Step #4 Drain.
  • Step #5 To prevent sticking, drain & as soon as possible pour onto a large lipped baking sheet & let cool while preparing sauce.
  • Step #6 Meanwhile, microwave the milk & chicken broth in a 4-c Pyrex measuring c or bowl until hot & steamy (not boiling).
  • Step #7 Melt butter in the empty pasta pot; whisk in flour, then hot milk mixture.
  • Step #8 Continue to whisk until thick & bubbly, 3 to 4 mins.
  • Step #9 Whisk in mustard, Parmesan & pepper.
  • Step #10 Turn off heat, stir in the cheddar until melted.
  • Step #11 Add drained pasta (and optional flavoring ingredients, see notes) to sauce, & stir until everything is well mixd over low heat/flame.
  • Step #12 Stir to heat through, & thin with a little water if the sauce is too thick.
  • Step #13 Serve hot.
