Cinnamon Blueberry Hotcakes Recipe

Ingredients
  • 2 tsps vanilla .
  • 1 egg .
  • 3 tsps baking powder .
  • 2 tbsps butter, melted .
  • 1/2 tsp salt .
  • 1/2 c wild blueberries, frozen .
  • 1 tbsp sugar .
  • 1 c flour .
  • 1 tsp cinnamon .
  • 3/4 c milk

Directions
  • Step #1 Preheat oven to 275 degrees.
  • Step #2 Combine egg, vanilla, milk, & melted butter & mix well.
  • Step #3 In a separate bowl mix together dry ingredients.
  • Step #4 Add frozen blueberries & stir carefully to coat.
  • Step #5 Add wet ingredients to dry ingredients & mix carefully until just mixd.
  • Step #6 Allow mixture to stand for ten mins before cooking.
  • Step #7 Heat a heavy griddle or fry pan which is greased with a little butter.
  • Step #8 Pour a 1/4 c of batter into pan & tip to spread.
  • Step #9 When bubbles appear on surface & begin to break, turn over & cook the other side.
  • Step #10 Butter & place on foil wrap in oven to keep warm until you're ready to serve them up.
  • Step #11 This keeps them nice & hot.
