Protein Pancakes Recipe

Ingredients
  • 1 tsp vanilla extract .
  • 1 c protein powder (2 scoops Cytosport Evopro Fuji Apple Whey Protein -gives a delicious apple taste but feel free to tr) .
  • 2 whole eggs .
  • 1 c cottage cheese (strain off excess liquid) .
  • 1 c water .
  • 1 c all-purpose flour .
  • 1 tsp butter flavor extract .
  • 1 tsp olive oil (for pan) .
  • 3 tsps baking powder (Featherweight Brand is best, no sodium or carbs)

Directions
  • Step #1 mix dry ingredients In a large-ish mixing bowl.
  • Step #2 Add eggs, cottage cheese, vanilla & butter extracts & water.
  • Step #3 mix well & let this stand for 10 mins.
  • Step #4 preheat non-stick frypan on medium heat.
  • Step #5 spread olive oil in pan - use paper towel to sop up any excess.
  • Step #6 once pan is hot, mix batter again & pour enough batter into pan to make approximately a 6" pancake.
  • Step #7 When bubbles begin to form in batter, flip & cook other side.
