Summer Tea Sandwiches Recipe

Ingredients
  • 1/4 tsp pepper .
  • 1/2 tsp lemon juice .
  • 1 medium cucumber, sliced thin .
  • 24 slices multi-grain bread, crusts removed .
  • 1/2 tsp dried tarragon .
  • 1/2 c reduced-fat mayonnaise .
  • 1 lb boneless skinless chicken breasts .
  • 1/4 cantaloupe, cut into 12 thin slices .
  • 1 tbsp red onions, finely sliced .
  • 1 tsp dill weed .
  • 1/2 tsp salt, divided

Directions
  • Step #1 Combine tarragon, 1/4 tsp salt & pepper; rub over chicken.
  • Step #2 Place on a baking sheet coated with nonstick spray.
  • Step #3 Bake at 350 degrees 20-25 mins, until juices run clear.
  • Step #4 Cool to about room temp.
  • Step #5 Slice thin.
  • Step #6 Combine mayonnaise, dill, onion, lemon juice & remaining salt; spread over one side of 12 slices bread.
  • Step #7 Top with cucumber, chicken, cantaloupe, & remaining bread.
  • Step #8 Cut sandwiches in half diagonally.
