Lemon Meringue Ice-cream With Mango Sauce Recipe

Ingredients
  • 4 oz lemon curd, i use 1/2 a jar but it wouldnt accept that as an amount .
  • 1 lemon, juice & rind of .
  • mangoes, sauce .
  • 3 tbsps lemon curd .
  • 50 g cooked meringues, they can be broken ones .
  • 1 small mango, cut into small cubes .
  • 300F ml double cream

Directions
  • Step #1 METHOD.
  • Step #2 • Break up the meringue into chunky pieces.
  • Step #3 • Whisk the cream lightly, add the lemon rind & juice & lemon curd to the cream & lastly fold in the broken meringue.
  • Step #4 Try not to over crush the meringues.
  • Step #5 • Line a loaf tin with cling-film & spoon in the lemon meringue mixture.
  • Step #6 Cover up with cling film then freeze for at least 6 hrs.
  • Step #7 • For the sauce, mix the mango with the lemon curd & spoon over the sliced ice-cream.
