Creamy White Layers Recipe

Ingredients
  • 2 tsps baking powder
  • 2 1/2 tsps brandy
  • 1 pint fresh strawberries
  • 3 c heavy whipping cream
  • 1/2 tsp salt
  • 4 eggs
  • 1 1/2 c super fine sugar
  • 3 tbsps confectioners' sugar
  • 2 1/2 c cake flour
  • 2 tsps vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly grease & flour two 9 inch cake pans.
  • Step #3 Stir together the cake flour, baking powder, salt, & super fine sugar.
  • Step #4 Separate the eggs save the egg yolks for another use.
  • Step #5 In a glass or copper bowl beat the egg whites until foamy.
  • Step #6 Mix 1 1/2 c of the heavy cream with the vanilla.
  • Step #7 Stir into the flour mixture then fold in the egg whites.
  • Step #8 Pour batter into prepared pans.
  • Step #9 Bake at 350 degrees F (175 degrees C ) for 30 mins.
  • Step #10 Let cakes cool in pans for ten mins then invert onto a wire rack to continue cooling.
  • Step #11 Once cakes are completely cool frost with fresh whipped cream & serve this with fresh strawberries.
  • Step #12 To Make Frosting: Beat on lowish speed until stiff 1 1/2 c heavy cream (make sure it's very cold).
  • Step #13 Beat in the confectioners' sugar & 2 1/2 tsps brandy.
  • Step #14 Use as soon as possible to frost cake.
