Couscous With Spinach And Pine Nuts Recipe

Ingredients
  • 3-6 garlic cloves, minced .
  • 1/2-1 tsp cracked black pepper .
  • 1/2 tsp salt .
  • 1 c dry couscous (try whole wheat) .
  • 1 large onion, sliced .
  • 1 (28 oz) can sliced tomatoes .
  • 1/4 c olive oil .
  • 1 c grated muenster cheese (try reduced fat) .
  • 1/2 c minced fresh basil .
  • 1 1/2 c boiling water .
  • 5 c loosely packed fresh spinach .
  • 1/3 c pine nuts

Directions
  • Step #1 Add couscous & salt to boiling water.
  • Step #2 Cover up & let sit 5 mins, then fluff with fork.
  • Step #3 Preheat oven to 375.
  • Step #4 Heat oil in large skillet.
  • Step #5 Saute garlic & onion for ten mins, or until tender.
  • Step #6 Drain canned tomatoes, reserving 1/3 c juice.
  • Step #7 Add drained tomatoes to garlic & onions.
  • Step #8 Cook 10 more mins, stirring frequently.
  • Step #9 Stir tomato mixture into couscous.
  • Step #10 Mix in reserve tomato juice, pine nuts, basil, raw spinach & pepper.
  • Step #11 Spread half of the couscous mixture in a shallow baking dish.
  • Step #12 Sprinkle top muenster evenly, then top this with remaining couscous mixture.
  • Step #13 Cover up dish with foil wrap & bake this at 375 for 25 mins.
