Egg Foo Yung (fried Rice With Eggs And Beansprouts) Recipe

Ingredients
  • 115 g fresh bean sprouts .
  • 4 spring onions, sliced .
  • 3 c cooked long-grain rice .
  • 1 tbsp sesame oil .
  • 3 eggs, beaten .
  • 1 small green pepper, seeded & sliced .
  • 1 pinch five-spice powder (optional) .
  • salt & fresh ground pepper .
  • 1 garlic clove, crushed .
  • 3 tbsps peanut oil .
  • 3 tbsps light soy sauce

Directions
  • Step #1 Spice up the eggs & beat in the five-spice powder, if using.
  • Step #2 In a wok or large frying pan, heat one tbsp of the oil & when quite hot, pour in the egg.
  • Step #3 Cook the egg, lifting the mixture away from the sides & allowing the liquid to slip underneath, until the omelette is firm.
  • Step #4 Then tip out & slice into small strips.
  • Step #5 Heat the remaining oil & stir-fry the onion, garlic, pepper & beansprouts for about 2 mins, stirring & tossing continously.
  • Step #6 Mix in the cooked rice & heat throughly, stirring well.
  • Step #7 Add the soy sauce & sesame oil & adjust the seasoning if necessary.
  • Step #8 Add the omelette strips & mix in well.
  • Step #9 Serve hot.
