1/2 c unsweetened cocoa powder (dutch processed if you have it) .
3 c powdered sugar, sifted .
1/4 c soy milk or rice milk .
1/2 c shortening .
2 tsps vanilla extract (or extract of your choice, match to the flavor you want) .
1/2 c margarine, softened (I like Earth Balance)
Directions
Step #1 Using a stand mixer with paddle attachment, cream the margarine & shortening together.
Step #2 Add cocoa, powdered sugarand the liquids & mix slowly until incorporated; going too fast on this step is messy -- powdered sugar clouds & splatters -- go slow until you get those mixed in!
Beat on high until fluffy.
Step #3 It usually takes 5-8 mins of beating in the mixer for this to get super fluffy --- you will see the texture change & the color gets significantly lighter as well.
Step #4 Variations: good substitutions for the soymilk are ricemilk, coconut milk, nutmilks(if allergies permit) or orange juice.
Step #5 To vary the flavor, peppermint, orange, rum, try different extracts: almond, raspberry, etc.
