Step #1 Heat the oil In a large-ish pot over med-heat/flame.
Step #2 Add the onion, cover & cook this until softened, about 5 mins.
Step #3 Add the carrots & potato, cover & cook 10 mins longer.
Step #4 Remove & cover & stir in the cayenne, paprika, cumin, pepper, salt, ginger, cardamom & tomato paste.
Step #5 Add chickpeas & water & bring to a boil.
Step #6 Reduce heat to low & let simmer, covered, about 30 mins, until vegetables are tender & the flavor is developed, adding a bit more water if needed.
Step #7 About 10 mins before the stew is ready, stir in the green peas & taste to adjust seasonings.
