Ethiopian Chickpea Wat Recipe

Ingredients
  • 1/2 tsp ginger .
  • 1/2 tsp paprika .
  • 2 tbsps extra virgin olive oil .
  • 1 tbsp tomato paste .
  • 1 c frozen peas, thawed .
  • 1 1/2 c water .
  • 1 c chickpeas, drained & rinsed .
  • 1/2 tsp cayenne pepper .
  • 1/2 tsp salt .
  • 1 large red onion, finely sliced .
  • 2 carrots, finely sliced .
  • 1/4 tsp cumin .
  • 1 potato, peeled & sliced .
  • 1/2 tsp black pepper .
  • 1/4 tsp cardamom

Directions
  • Step #1 Heat the oil In a large-ish pot over med-heat/flame.
  • Step #2 Add the onion, cover & cook this until softened, about 5 mins.
  • Step #3 Add the carrots & potato, cover & cook 10 mins longer.
  • Step #4 Remove & cover & stir in the cayenne, paprika, cumin, pepper, salt, ginger, cardamom & tomato paste.
  • Step #5 Add chickpeas & water & bring to a boil.
  • Step #6 Reduce heat to low & let simmer, covered, about 30 mins, until vegetables are tender & the flavor is developed, adding a bit more water if needed.
  • Step #7 About 10 mins before the stew is ready, stir in the green peas & taste to adjust seasonings.
