Oatmeal Breakfast Cake Recipe

Ingredients
  • 1 c graham cracker crumbs .
  • 1/2 tsp salt (I omitted) .
  • 1 c old-fashioned oatmeal .
  • 1 c buttermilk .
  • 1/2 tsp ground cinnamon .
  • 1 c all-purpose flour .
  • 3/4 c brown sugar, packed .
  • 1/3 c granulated sugar .
  • 1 tsp baking soda .
  • 1 tsp baking powder .
  • 3 eggs (I substituted with egg beaters) .
  • 1/2 c vegetable oil (I used light olive oil)

Directions
  • Step #1 Preheat oven to 350*.
  • Step #2 Coat a 12 c bundt pan with cooking spray.
  • Step #3 Combine flour, sugars, baking soda, crumbs, baking powder, oats, cinnamon & salt.
  • Step #4 In seperate bowl, whisk together oil, buttermilk & eggs.
  • Step #5 Add buttermilk mixture to dry ingredients & whisk until mixd.
  • Step #6 Pour batter into prepared pan.
  • Step #7 Bake 40 mins or until wooden pick inserted in the center comes out clean.
  • Step #8 Cool on a wire rack for 5 mins.
  • Step #9 Remove from pan; cool completely on wire rack.
