Chicken With Roquefort Cream Sauce Recipe

Ingredients
  • 3 1/2 lbs chickens, cut into 8 pieces .
  • 3 tbsps olive oil .
  • 1/4 c dry white wine (pinot gris works well) .
  • 3/4 c crumbled Roquefort cheese .
  • sliced fresh chives .
  • 1 tsp herbes de provence or dried thyme, crumbled .
  • 1 c whipping cream .
  • 5 garlic cloves, minced

Directions
  • Step #1 Heat oil in heavy large skillet over medium-high heat.
  • Step #2 Spice up chicken with pepper.
  • Step #3 Add chicken to skillet & cook this until golden brown on all sides, about 8 mins.
  • Step #4 Add cream, wine, garlic & herbes de Provence.
  • Step #5 Cover up & let simmer until chicken is.
  • Step #6 tender & cooked through, turning once, about 20 mins.
  • Step #7 Transfer chicken to platter.
  • Step #8 Boil cooking liquid in skillet until reduced to sauce consistency, about 5 mins.
  • Step #9 Add cheese & whisk until cheese is melted & sauce is smooth.
  • Step #10 Spice up generously with pepper.
  • Step #11 Pour sauce over chicken.
  • Step #12 Garnish with chives & serve.
