Black Currant Pudding Recipe

Ingredients
  • 2 c black currants .
  • 2/3 c heavy cream .
  • 1/4 c sugar .
  • 1/3 c plain yogurt .
  • 1 tsp lemon juice .
  • 2 egg whites

Directions
  • Step #1 Puree the black currants & strain.
  • Step #2 Stir the sugar & lemon juice into the puree.
  • Step #3 WDhip the cream until it holds its shape, then fold in the yogurt & black currant puree.
  • Step #4 Beat the egg whites & fold into the fruit mixture.
  • Step #5 Spoon into 4 glasses, chill for 30 mins, decorate ewith mint sprigs & serve this with crisp sweet cookies.
