Black Currant Pudding Recipe

Ingredients

2 c black currants .
2/3 c heavy cream .
1/4 c sugar .
1/3 c plain yogurt .
1 tsp lemon juice .
2 egg whites

Directions

Step #1 Puree the black currants & strain.
Step #2 Stir the sugar & lemon juice into the puree.
Step #3 WDhip the cream until it holds its shape, then fold in the yogurt & black currant puree.
Step #4 Beat the egg whites & fold into the fruit mixture.
Step #5 Spoon into 4 glasses, chill for 30 mins, decorate ewith mint sprigs & serve this with crisp sweet cookies.
