Turkey Cutlets With Tart Cherry Sauce Recipe

Ingredients
  • salt & pepper .
  • 3-4 tbsps butter or oil, plus 2 tbsps cold butter, cut into 4 chunks, for finishing .
  • 1 1/2 lbs turkey breast, cutlet sliced 1/2-inch thick .
  • 1 (15 oz) can tart cherries (recommended — Oregon) .
  • 1/2 c all-purpose flour .
  • 1 c merlot .
  • 1 tbsp brown sugar .
  • 2 tbsps orange juice concentrate

Directions
  • Step #1 Preheat the oven to 200 degrees F.
  • Step #2 In a large frying pan, heat the pan over medium-high heat & then add half the butter or oil.
  • Step #3 Spice up turkey cutlet slices with salt & pepper.
  • Step #4 Place in large zip-top bag, along with the flour.
  • Step #5 Seal bag & shake to coat turkey.
  • Step #6 Remove turkey from bag, shaking off excess flour.
  • Step #7 Cook in a hot pan for 3 to 4 mins per side, or until done.
  • Step #8 Transfer to an ovenproof plate & place this in the oven to keep warm.
  • Step #9 Repeat with the remaining butter or oil & turkey.
  • Step #10 Add red wine, orange juice concentrate, & sugar to pan & scrape up any browned bits in pan.
  • Step #11 Bring to a boil & let reduce by half, about 5 mins.
  • Step #12 Reduce heat & swirl in the cherries & cold butter to incorporate.
  • Step #13 Spice up with salt & pepper, to taste.
  • Step #14 Serve the turkey culets on individual plates with some sauce spooned over the top.
