Spicy Szechuan Noodles (dan Dan Mian) Recipe

Ingredients
  • Saute Mixture .
  • 1 dash white pepper .
  • 3/4 tsp red pepper flakes .
  • 1 tbsp soy sauce .
  • 1 1/4 c chicken broth .
  • 8 oz ground pork .
  • 1 tbsp peanut oil .
  • Sauce mixture .
  • 1 tbsp toasted sesame oil .
  • 6 garlic cloves (put through press or mince finely) .
  • 12 oz dried Asian noodles (wide works best) .
  • 2 c bean sprouts .
  • 3 medium scallions, sliced thin .
  • 4 tbsps peanut butter .
  • Meat mixture .
  • 2 tbsps soy sauce .
  • 2 tbsps oyster sauce .
  • 2 tbsps dry sherry .
  • 1 dash white pepper .
  • 1 tbsp rice vinegar .
  • 1 tbsp minced fresh ginger .
  • Condiments

Directions
  • Step #1 Combine meat mixture ingredients in small bowl.
  • Step #2 Work together well & let rest while preparing other ingredients.
  • Step #3 Whisk together sauce ingredients except broth until smooth.
  • Step #4 Add broth & whisk well.
  • Step #5 Boil 4 quarts of water.
  • Step #6 Heat 12 inch skillet over high heat until hot, about 2 mins.
  • Step #7 Add peanut oil & swirl.
  • Step #8 Add meat mixture & cook, breaking up into small pieces until pork is well browned, about 5 mins.
  • Step #9 Stir in ginger, garlic & red pepper flakes, cook this until fragrant, about 1 min.
  • Step #10 Add sauce mixture; whisk to mix & bring to a boil.
  • Step #11 Reduce heat to medium low & let simmer while noodles are cooking.
  • Step #12 Just before serving stir in the sesame oil.
  • Step #13 Drain noodles; divide into individual bowls, top this with sauce.
  • Step #14 Sprinkle top with scallions & bean sprouts as desired while eating.
