Hawaiian Bread Recipe

Ingredients
  • 1 (1/4 oz) package active dry yeast .
  • 1/2 tsp salt .
  • 1/4 c sugar .
  • 1 medium banana, mashed .
  • 1/4 c butter or margarine .
  • 1 egg, beaten .
  • 3-3 1/2 c all-purpose flour .
  • 1 (8 1/4 oz) can crushed pineapple

Directions
  • Step #1 In large bowl, mix 1 1/2 c flour & yeast; set aside.
  • Step #2 Drain pineapple in a sieve, pressing out as much juice as possible.
  • Step #3 Reserve juice in a 1-c measure; add water to make 1/2 c.
  • Step #4 Pour juice into small saucepan.
  • Step #5 Add sugar, salt & butter.
  • Step #6 Stir mixture constantly over medium-high heat until butter softens.
  • Step #7 Add juice mixture, banana & egg to flour mixture.
  • Step #8 Beat 1 min with electric mixer on lowish speed.
  • Step #9 Scrape batter from sides of bowl; beat 2 mins longer at high speed.
  • Step #10 By hand, stir in the enough remaining flour to make a soft dough.
  • Step #11 Stir in drained pineapple.
  • Step #12 Cover up bowl with towel; let rise in a warm place, until doubled 1 to 1 1/2 hrs.
  • Step #13 Stir down dough.
  • Step #14 Grease a 2-quart casserole with high sides or a souffle dish.
  • Step #15 Turn dough into dish.
  • Step #16 Cover up with towel; let rise 45 mins.
  • Step #17 Preheat oven to 375 degrees F.
  • Step #18 Bake until golden brown, 30 to 40 mins.
  • Step #19 Cool in dish 5 mins; remove this from dish.
