Key West Grilled Mahi-mahi Recipe

Ingredients
  • 6 drops cholula hot pepper sauce (or to taste) .
  • 2 tbsps olive oil .
  • 1 tbsp water .
  • 1/2 tsp celery salt .
  • 14-16 oz mahi mahi fillets (2) .
  • 1 tsp honey .
  • 1/8 tsp black pepper .
  • 1 tbsp sliced scallions .
  • 1 lime, juice of .
  • Rose's lime juice

Directions
  • Step #1 Combine fresh lime juice & enough Rose's Lime juice to make 1/3 c.
  • Step #2 Add the oil, scallion, celery salt, salt, black pepper, hot-pepper sauce, water & honey in a small bowl & whisk to incorporate.
  • Step #3 Place Mahi-mahi in a zip-lock style bag & pour 4 tbsps of the mixture over fish; turn to coat.
  • Step #4 Refrigerate 20 mins, turning once.
  • Step #5 Reserve remaining mixture for sauce (warm slightly).
  • Step #6 Prepare a charcoal grill with hot coals, or heat a gas grill to high, or heat broiler.
  • Step #7 Position grill rack 6 inches from coals or broiler pan 3 inches from heat.
  • Step #8 Grease grill rack or rack of a shallow roasting pan.
  • Step #9 Place fillets on rack.
  • Step #10 Drizzle with half of lime juice mixture from marinade bag.
  • Step #11 Grill over hot coals on covered grill 2 mins per side or until cooked through, or broil 4 mins per side.
  • Step #12 Serve Mahi-mahi with remaining sauce warmed.
