Texas Caviar Recipe

Ingredients
  • 1 c Splenda sugar substitute .
  • 1 small onion, finely sliced .
  • 2 (11 oz) cans white shoepeg corn .
  • 1 (15 oz) can black beans .
  • 1 (15 oz) can pinto beans .
  • 2 (4 oz) cans sliced green chilies .
  • 1/2 c vegetable oil .
  • 1 tbsp water .
  • 1 c finely sliced green bell peppers .
  • 1 (15 oz) can garbanzo beans .
  • 1 tsp salt .
  • 3/4 c cider vinegar .
  • 1 (15 oz) can black-eyed peas .
  • 1/2 tsp black pepper .
  • 1 c finely sliced celery .
  • 2 oz finely sliced pimentos

Directions
  • Step #1 Combine vinegar, oil, water, sugar, salt & pepper in saucepan.
  • Step #2 Bring to a boil, stirring every once in awhile.
  • Step #3 Cool to about room temp.
  • Step #4 Drain beans, peas, green chilies, corn, & pimento.
  • Step #5 Combine with green peppers, celery, & onion in a bowl.
  • Step #6 Add marinade & mix well.
  • Step #7 Chill covered for 24 hrs.
  • Step #8 Serve with tortilla chips.
