Lobster Ravioli With Crabmeat Cream Sauce Recipe

Ingredients
  • 8 oz semolina .
  • 2 oz ricotta cheese .
  • 4 oz cooked snow crabmeat .
  • pepper .
  • salt .
  • water, as needed .
  • 1 egg white, slightly beaten .
  • 1 pinch salt .
  • 2 oz cognac .
  • 1 tbsp sliced shallots .
  • 1 egg .
  • 1 tbsp sliced shallots .
  • 1 tbsp sliced chives .
  • 16 oz cooked lobster meat .
  • 2 oz unsalted butter .
  • 2 oz unsalted butter .
  • 4 oz whole chunk maryland crabmeat .
  • 1 garlic clove, sliced .
  • 10 oz heavy cream .
  • 8 oz durum flour .
  • 2 oz cognac .
  • 5 oz tomato sauce .
  • salt

Directions
  • Step #1 For the Lobster Ravioli: In a large saute pan, add the butter & melt.
  • Step #2 Add the garlic & shallots & saute until golden brown.
  • Step #3 Add lobster, crab, & chives & saute 2 to 3 mins.
  • Step #4 Add Cognac & reduce for 2 mins.
  • Step #5 Remove from heat & cool for 30 mins, until room temperature.
  • Step #6 Chop lobster mixture into small chunks.
  • Step #7 In a large bowl, mix lobster mixture & ricotta & mix well.
  • Step #8 Spice up with salt & pepper.
  • Step #9 Lay out the first piece of pasta dough on the table & place 1/4-oz mounds of stuffing 2 inches apart.
  • Step #10 Using a pastry brush, brush egg white around each bit of stuffing, making the dough damp not wet.
  • Step #11 Take the second piece & cover the bottom piece with the stuffing.
  • Step #12 Press around each ravioli being careful not to squeeze the stuffing out.
  • Step #13 Using a round ravioli cutter, cut each ravioli round & put on a sheet pan sprinkled with semolina.
  • Step #14 Gently place ravioli in boiling water & cook for 8 to 10 mins, or until al dente.
  • Step #15 For the sauce: Using a 12-inch saute pan at medium heat, shallots, add butter, & saute until shallots are translucent.
  • Step #16 Add the crabmeat & saute for about 2 to 3 mins.
  • Step #17 Remove the saute pan from the burner & add Cognac then place pan back on the heat to cook off the alcohol.
  • Step #18 (Please beware: the Cognac will create a large flame.
  • Step #19 ) Once the flame stops, add the tomato sauce & cream with salt & cook this until it reduces half way & becomes creamy.
  • Step #20 Add the cooked ravioli to the sauce & let cook together for about 1 min before serving.
  • Step #21 Garnish with chives.
  • Step #22 Pasta Dough: Add all the ingredients into a large mixing bowl until all ingredients are mixed.
  • Step #23 Place mixture on countertop & knead until the texture is smooth & well mixed.
  • Step #24 Separate the pasta dough into 2 equal pieces & put one piece aside.
  • Step #25 Flour the first piece, just enough to prevent sticking & roll out with a rolling pin to about 1/8th-inch thick.
  • Step #26 Repeat procedure with second piece making it as close to the shape as the first.
  • Step #27 CAN USE WON-TON WRAPPERS.
