Cashew Sour Cream - A Non-dairy Sour Cream Alternative Recipe

Ingredients
  • 1-2 tsp apple cider vinegar .
  • 1 c raw cashews (must not be roasted or salted) .
  • 1/4 tsp salt .
  • 1 small lemon, juice of

Directions
  • Step #1 Cover up cashews with water & soak for a few hrs, or overnight.
  • Step #2 Pour off all water, & place nuts in food processor/blender.
  • Step #3 Add 1/4 c cold water, salt, vinegar & lemon juice.
  • Step #4 Puree for 3-4 mins or until completely smooth & creamy in consistency.
  • Step #5 Use in any recipe that calls for sour cream.
  • Step #6 Refrigerate in an airtight container for up to a week.
