Sourdough Oatmeal Muffins Recipe

Ingredients
  • 1 egg, slightly beaten .
  • 1/4 c canola oil .
  • 1/2 c brown sugar, packed .
  • 1 tsp cinnamon .
  • 2 tsps orange extract or vanilla extract .
  • 1 c rolled oats .
  • 1 tbsp orange zest .
  • 1 c plain yogurt .
  • 1 tsp baking soda .
  • 1/4 c Splenda brown sugar mix, or .
  • 1 tsp salt .
  • 1/2 c dried cranberries .
  • 1 1/2 c flour (I use 1/2 white flour & 1/2 whole wheat pastry flour.) .
  • 1 c sourdough starter, freshly fed

Directions
  • Step #1 In a mixer container or food processor/blender bowl, mix together the flours, oats, salt, brown sugar, baking soda & cinnamon.
  • Step #2 In large mixing bowl, whisk together the egg, yogurt, oil & extract; stir in the the sourdough starter.
  • Step #3 Add the flour mixture to the egg mixture; stirring just to moisten ingredients.
  • Step #4 Mix in the orange zest & dried cranberries; the batter will be a thick muffin batter.
  • Step #5 Spray muffin tins with cooking spray & fill about 2/3 full; allow dough to rest while oven preheats.
  • Step #6 Preheat oven to 375 degrees & when heated, bake muffins for 30 to 35 mins.
