Chicken Enchiladas Recipe

Ingredients
  • 2 tbsps garlic .
  • 1 c cheddar cheese, shredded .
  • 6 flour tortillas .
  • 1 (4 oz) can sliced green chilies .
  • 2 lbs boneless skinless chicken breasts .
  • 1 tbsp butter .
  • 10 oz sliced tomatoes .
  • 1 (10 oz) can 98% fat-free cream of mushroom soup

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Cut the chicken into bite sized pieces & cook this until no longer pink.
  • Step #3 Drain & set aside.
  • Step #4 In a separate pan, melt the butter.
  • Step #5 Add the garlic & cook this until soft (1-2 mins).
  • Step #6 Add the soup, tomatoes, & chiles & cook this until heated through.
  • Step #7 Set aside ¾ of the sauce mixture.
  • Step #8 To the remaining ¼ of the sauce, add the cooked chicken & ½ c of the shredded cheddar cheese.
  • Step #9 Stir until cheese is melted.
  • Step #10 Place the chicken mixture on each of the six tortillas.
  • Step #11 Roll the tortillas & lay the, seam side down in a greased 9 x 13 baking dish.
  • Step #12 Pour the reserved sauce over top.
  • Step #13 Sprinkle top with the remaining ½ c cheddar cheese.
  • Step #14 Bake for 30-35 mins.
