Good Ol' Southern Soup Beans For Pressure Cooker Recipe

Ingredients
  • 1 garlic clove, minced .
  • 1 ham hock (salt pork, ham bone, or other salty pork) .
  • 6 c hot water .
  • 1 lb dried beans (pinto preferred, but almost anything will work, my school cafeteria always made them with navy beans) .
  • 1 tbsp butter or bacon grease .
  • 1 small onion, sliced

Directions
  • Step #1 Follow directions on bean bag for presoaking the beans.
  • Step #2 Drain & rinse beans, sit aside.
  • Step #3 In the pan melt butter (or bacon grease) over med-heat/flame.
  • Step #4 Cook onions & garlic until soft & lightly brown.
  • Step #5 Add beans, ham hock, & water to pressure cooker.
  • Step #6 Put on lid & seal.
  • Step #7 Bring heat up to high.
  • Step #8 Once pressure has been reached, reduce heat to low & cook for 30 mins.
  • Step #9 Remove the pressure cooker from heat & release the pressure with a quick release method.
  • Step #10 Remove the cover & test beans for doneness.
  • Step #11 If necessary cover & return the pot to pressure & cook for another 5 mins.
  • Step #12 Remove the ham hock from the soup.
  • Step #13 Discard the skin & bones.
  • Step #14 Chop the remaining meat & add it back to the soup.
  • Step #15 Spice up with extra salt & pepper if necessary.
  • Step #16 Serve hot with crumbled corn bread.
