Fast White-bean Stew Recipe

Ingredients
  • 1/4 tsp black pepper .
  • 1 (5 oz) bag baby romaine lettuce or baby spinach .
  • 8 slices baguette (3/4-inch-thick) .
  • 2 large garlic cloves, sliced .
  • 1 tbsp olive oil .
  • 1 3/4 c reduced-sodium chicken broth .
  • 2 (19 oz) cans cannellini beans, undrained .
  • 8 oz cooked ham, cut into 1/2-inch cubes .
  • 1 (15 oz) can stewed tomatoes

Directions
  • Step #1 Cook garlic in oil in a 3 1/2- to 4 1/2-quart heavy pot over moderately high heat, stirring, until golden, 1 to 2 mins.
  • Step #2 Coarsely cut up tomatoes in can , then add (with juice) to garlic in oil.
  • Step #3 Stir in broth, beans, ham, & pepper & bring to a boil.
  • Step #4 Reduce heat & let simmer, uncovered, 5 mins.
  • Step #5 Stir in greens & cook this until wilted.
  • Step #6 While stew is simmering, preheat broiler.
  • Step #7 Put bread on a baking sheet & drizzle with remaining 1/2 tbsp oil.
  • Step #8 Broil 3 to 4 inches from heat until golden, 1 to 1 1/2 mins.
  • Step #9 Serve stew with toasts.
