Tuna Melt With Avocado Recipe

Ingredients
  • 2 tsps fresh lemon juice .
  • 1/2 c mayonnaise (Hellman's) .
  • 2 tbsps finely sliced red onions .
  • 2 tsps unsalted butter .
  • 1 c shredded sharp cheddar cheese .
  • 1 avocado, peeled, pit removed, thinly sliced, & lightly salted .
  • 4 slices rye bread .
  • 2 (6 oz) cans solid white tuna packed in water, drained & flaked .
  • 2 tbsps finely sliced celery

Directions
  • Step #1 Place the sliced red onion in a small strainer; place strainer in a bowl of ice water; let sit for 10 mins; drain onion & pat dry.
  • Step #2 In a bowl, celery, tuna, mayo, mix together the onion, & lemon juice.
  • Step #3 Spice up to taste with salt & pepper.
  • Step #4 Preheat the broiler; lightly toast the bread, & spread each slice with butter.
  • Step #5 Distribute avocado slices evenly over the 4 slices of bread.
  • Step #6 Spread tuna mixture evenly on top of avocado; sprinkle cheese evenly on top.
  • Step #7 Place under the broiler until cheese is melted, 1-2 mins.
  • Step #8 Serve as soon as possible.
