Espresso Fudgies Recipe

Ingredients
  • 2 tbsps cold espresso coffee or very strong coffee .
  • 2 c powdered sugar .
  • 1/4 c powdered sugar .
  • 1/4 c butter or margarine, softened .
  • chocolate-covered coffee beans, if desired (optional) .
  • 2 tbsps butter or margarine, softened .
  • 2 tsps instant espresso powder .
  • Espresso Frosting .
  • 2 tbsps butter or margarine, softened .
  • 2 tbsps unsweetened baking cocoa .
  • 1 (3 oz) package cream cheese, softened .
  • 1 egg .
  • 1/3 c unsweetened baking cocoa .
  • Espresso Fudge Filling .
  • 3/4 c Gold Medal all-purpose flour .
  • 1/2 tsp vanilla .
  • 2/3 c granulated sugar .
  • Fudgies

Directions
  • Step #1 Heat oven to 350ºF.
  • Step #2 In large bowl, beat 1/4 c butter & the cream cheese with electric mixer on medium speed, or mix with spoon.
  • Step #3 Stir in flour, 1/4 c powdered sugar, 2 tbsps cocoa & the vanilla.
  • Step #4 Divide dough into 24 equal pieces.
  • Step #5 Press each piece in bottom & up side of small muffin c, 1 3/4x1 inch, ungreased or lined with foil wrap or paper baking c.
  • Step #6 In medium bowl, mix all Espresso Fudge Filling ingredients.
  • Step #7 Spoon about 2 tsps filling into each c.
  • Step #8 Bake 18 to 20 mins or until almost no indentation remains when filling is touched lightly.
  • Step #9 Cool slightly; loosen from c with tip of knife.
  • Step #10 Remove from pan to wire rack.
  • Step #11 Cool completely, about 1 hr.
  • Step #12 Meanwhile, in medium bowl, mix all Espresso Frosting ingredients until smooth & spreadable.
  • Step #13 Spread cooled fudgies with frosting.
  • Step #14 Top with espresso beans.
