Sherry Orleans Pralines Recipe

Ingredients
  • 1 tbsp sherry wine or vanilla .
  • 1 c granulated sugar .
  • 1/2 c evaporated milk .
  • 2 c pecan halves or sliced pecans .
  • 1 c brown sugar

Directions
  • Step #1 Mix first four ingredients in a heavy saucepan.
  • Step #2 Cook over med-heat/flame to soft ball stage (236F) stirring constantly.
  • Step #3 Remove from heat.
  • Step #4 When mixture stops bubbling, stir in the sherry.
  • Step #5 Cool slightly.
  • Step #6 Then beat mixture until it thickens slightly.
  • Step #7 Drop candy from a tbsp onto waxed paper to form patties.
  • Step #8 If candy becomes too stiff, drop in a few drops of hot water.
