Ingredients
1/2 tsp salt .
1/4 c brown sugar or sucanat .
2 tbsps cornstarch .
2 pints strawberries, cut lengthwise in thirds .
1/3 c milk or buttermilk or non-dairy milk substitute .
2 1/2 c Pamelas ultimate baking & pancake mix (gluten-free) .
1 tsp cinnamon .
2 ripe bartlett pears, in 3/4 inch cubes .
1/2 tsp nutmeg .
3/4 c butter or shortening
Directions
Step #1 Preheat oven to 375°F In a medium bowl mix the sugar, cornstarch & nutmeg.
Step #2 Add berries & pears, & mix thoroughly until fruit is coated with the dry ingredients.
Step #3 Pour fruit mixture into greased 8x8" baking dish.
Step #4 In a large bowl, mix baking mix & salt.
Step #5 Cut shortening or butter into the baking mix, using your hands to mix until no large lumps appear.
Step #6 Add milk or milk substitute, & mix thoroughly with a wooden spoon (the mixture will not be completely smooth).
Step #7 Spoon batter over the top of the fruit, spreading over the whole dish.
Step #8 It will be thick, so use your hands to distribute it evenly.
Step #9 Leave a few small uncovered areas so that some of the liquid from the fruit can evaporate during the baking process.
Step #10 (Optional: Put a few pats of butter on the top of the cobbler before putting in the oven.
Step #11 ) Shake a bit of cinnamon evenly over the top of the dough.
Step #12 Bake for 30 mins or until knife inserted in biscuit topping comes out clean & the top has browned.
Step #13 Serve warm.
