Cream Cheese-filled Coffee Cake (light) Recipe

Ingredients
  • 1/4 c granulated sugar .
  • 1 c flour .
  • 1/4 tsp ground cinnamon .
  • 2 tsps vanilla .
  • 1 large egg yolk .
  • 2 oz light cream cheese, softened .
  • 1/3 c light strawberry jam .
  • 3 tbsps packed brown sugar .
  • 3 tbsps flour .
  • 1 1/2 tsps baking powder .
  • 1 large egg .
  • 2 tsps flour .
  • 3/4 c light sour cream .
  • Cake .
  • 1 large egg white .
  • 3/4 c 5% fat ricotta cheese .
  • Topping .
  • 3/4 c granulated sugar .
  • 3 tbsps vegetable oil .
  • Filling .
  • 2 tsps vegetable oil .
  • 1/3 c Grape-Nuts cereal .
  • 1 tsp vanilla .
  • 2 tsps water .
  • 1/2 tsp ground cinnamon

Directions
  • Step #1 Preheat the oven to 350°F Spray a 8 1/2 inch springform pan with vegetable spray.
  • Step #2 Make filling: in a food processor/blender, mix ricotta cheese, sugar, cream cheese, egg yolk, flour & vanilla; purée the mixture until it is smooth.
  • Step #3 Make topping: in a small bowl, brown sugar, stir this together cereal, cinnamon, flour, oil & water until crumbly.
  • Step #4 Make cake: In a large-ish bowl & using a whisk, egg, beat sugar, oil, egg white & vanilla.
  • Step #5 In another bowl, stir this together flour, baking powder & cinnamon.
  • Step #6 With a wooden spoon, stir the dry ingredients into the sugar mixture in batches, alternating with the sour cream, making two additions of dry & one of wet, & stirring the mixture just until it is mixd.
  • Step #7 Pour it into a prepared pan.
  • Step #8 Melt jam in a microwave or on the stovetop.
  • Step #9 Spread it over the cake batter.
  • Step #10 Pour the filling over top, spreading it to cover the batter.
  • Step #11 Sprinkle top with the topping.
  • Step #12 Place the pan in the centre of the oven & bake for 55 to 50 mins or until a tester inserted in the centre comes out clean.
  • Step #13 Let cook on a wire rack.
