Chicken And Vegetable Bean Soup Recipe

Ingredients
  • 1 c dried great northern beans .
  • 6 c water .
  • 2 1/2 c cooked chicken (shredded or sliced) .
  • 1 tsp dried rosemary, crushed .
  • 4 1/2 c chicken broth .
  • 1 (14 1/2 oz) can sliced tomatoes, undrained .
  • 1 c sliced onions .
  • 1/4 tsp pepper .
  • 2 tbsps snipped fresh parsley .
  • 2 medium carrots, sliced .
  • 2 garlic cloves, minced .
  • 1 medium fennel bulb, trimmed & cut into 1/2-inch pieces

Directions
  • Step #1 Rinse beans; drain.
  • Step #2 In a large saucepan, mix beans & the 6 c water.
  • Step #3 Bring to boiling; reduce heat.
  • Step #4 Simmer, uncovered, for 10 mins.
  • Step #5 Remove from heat.
  • Step #6 Cover up & let this stand for 1 hr.
  • Step #7 Drain & rinse beans.
  • Step #8 Meanwhile, rosemary, 4-, in a 3-1/2-, mix onion, carrots, parsley, garlic, or 5-quart crockery cooker, fennel, & pepper.
  • Step #9 Place beans atop vegetables.
  • Step #10 Pour chicken broth over all.
  • Step #11 Cover up; cook on low-heat setting for 8 to 10 hrs or on high-heat setting for 4 to 5 hrs.
  • Step #12 If using low-heat setting stir in the chicken & tomatoes.
  • Step #13 Cover up & cook for 30 mins longer or until heated through on high-heat setting.
