Creamy Tex-mex Polenta Recipe

Ingredients
  • 1 c cheddar cheese, shredded .
  • 2 tbsps cheddar cheese, shredded .
  • 2 tsps chipotle chiles in adobo, sliced .
  • 1/4 c scallions .
  • 1 c cornmeal .
  • 1/4 c butter .
  • 1/2 tsp salt

Directions
  • Step #1 In pot, bring 4 c salted water to boil; reduce heat to medium-low.
  • Step #2 Slowly stir in the cornmeal.
  • Step #3 Stir until mixture is thick & creamy, about 5 mins.
  • Step #4 Stir in butter, 1 c cheese, scallion, chipotle & salt until cheese & butter are melted.
  • Step #5 Serve sprinkled with remaining 2 T cheese.
