Body For Life Strawberry Cheesecake Recipe

Ingredients
  • 1 ready crust reduced fat graham cracker crust .
  • 2 tsps sugar substitute .
  • 1 c fresh strawberries, sliced .
  • 1/2 c nonfat sour cream .
  • 3 tbsps Splenda granular .
  • 1 c egg substitute .
  • 12 oz fat free cream cheese, softened at about room temp .
  • 1 c low fat cottage cheese .
  • 1 tbsp vanilla extract

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Spoon cottage cheese into mixer & mix until smooth, about 30 seconds.
  • Step #3 Add vanilla extract & Splenda; mix for about 15 more seconds.
  • Step #4 Add the softened cream cheese & mix for about 30 seconds, scraping down sides as needed.
  • Step #5 While mixing, slowly add the egg substitute & continue to mix until smooth, about 45 seconds.
  • Step #6 Pour cheese filling into Ready Crust & bake this until set, about 35 mins.
  • Step #7 Remove cheesecake from oven & cool for about 15 mins.
  • Step #8 Then cover & put in the fridge for at least 2 hrs.
  • Step #9 Prior to serving, in a small mixing bowl, mix sour cream & sugar substitute.
  • Step #10 Slice cheesecake into 8 portions, top this with sliced strawberries & sour cream.
