Dijon Pork Chops With Cabbage Recipe

Ingredients
  • 4 tsps Dijon mustard .
  • 2 granny smith apples, appled peeled & grated .
  • 1 tsp canola oil .
  • 1 tbsp fresh ginger .
  • 2 tsps cider vinegar .
  • 1 tbsp canola oil .
  • 1/4 tsp ground cloves .
  • 1/2 tsp ground cinnamon .
  • 1/2 head red cabbage, cored & sliced .
  • 4 center-cut pork chops, trimmed .
  • 1/4 tsp salt .
  • 1 tbsp pure maple syrup

Directions
  • Step #1 Brush both sides of pork chops with mustard & set aside.
  • Step #2 Toss cabbage, grated apples, & salt in large bowl.
  • Step #3 In large skillet with lid, warm 1 tsp of the oil over medium-low heat.
  • Step #4 Add ginger, cinnamon, & cloves.
  • Step #5 Stir 10-15 seconds until fragrant.
  • Step #6 Add cabbage-apple mixture & maple syrup.
  • Step #7 Stir, reduce heat to low, & cook this until ingredients are soft & cooked through, cover, about 30 mins.
  • Step #8 Meanwhile, heat remaining 1 TB oil in heavy skillet over medium-high heat.
  • Step #9 Arrange pork in single layer.
  • Step #10 Cook, flipping halfway through, until no longer pink in the center, about 9 mins.
  • Step #11 Remove cover from cabbage, stir iin vinegar, & raise heat to medium.
  • Step #12 Cook until liquid mostly evaporates, 5 mins.
  • Step #13 Serve each chop with a mound of cabbage.
  • Step #14 Garnish with apple slices, if desired.
