Chinese Fried Rice Recipe

Ingredients
  • 3/4 tsp salt .
  • 1 egg, beaten .
  • 3/4 c scallions, sliced .
  • 3 tbsps parsley, minced .
  • 1/4 tsp pepper .
  • 1 1/2 c sliced cooked shrimp (optional) or cooked chicken (optional) .
  • 3 tbsps oil .
  • 1 tbsp soy sauce .
  • 3 c cooked rice, cold

Directions
  • Step #1 Make rice in advance & put in the fridge.
  • Step #2 Heat the oil in a skillet.
  • Step #3 Stir in the rice until lightly browned, pressing out any lumps.
  • Step #4 Mix in the scallions, salt, pepper & shrimp or chicken.
  • Step #5 Saute for 1 min.
  • Step #6 Make a well in the center of the rice & pour the egg into it, stirring until barely set.
  • Step #7 Stir egg into the rice mixture.
  • Step #8 Add the parsley & soy sauce & stir.
  • Step #9 Cook 1 more min & serve as soon as possible.
  • Step #10 For Vegetarian omit both the chicken & the shrimp.
