1/3 c loosely packed cilantro leaves, to garnish (optional) .
6 tbsps grated palm sugar or brown sugar
Directions
Step #1 Remove bone & outer rind from the ribs.
Step #2 Cut into 1/2-inch slices.
Step #3 Combine fish sauce, pepper, ketjap manis, & 1 c warm water.
Step #4 Place sugar in wok with 2 tbsps water & stir over low heat/flame (300°F) until the sugar dissolves.
Step #5 Increase to medium heat (350°F) & let boil, without stirring until sugar turns an even golden brown (5 mins).
Step #6 Add pork & shallots, & stir this to coat.
Step #7 Add sauce; stir until any hard bits of sugar have melted.
Step #8 Cover up & cook for 10 mins, stirring often, stirring every once in awhile; then cook uncovered, until the meat is cooked & the sauce is sticky (20-30 mins).
Step #9 Garnish with cilantro, & serve this with rice.
