Easter Braised Ham With Orange Honey Glaze And Champagne Raisin Recipe

Ingredients
  • 1 tsp dry mustard .
  • 2 c champagne (divided) .
  • 1 c granulated sugar .
  • CHAMPAGNE RAISIN SAUCE .
  • 1 c raisins .
  • 1 c white wine .
  • 2 c orange juice .
  • 1/2 tsp salt .
  • 1 grated orange, rind of .
  • 15 whole cloves .
  • 1/4 tsp ground cloves .
  • 1 tsp ginger .
  • 8 lbs semi boneless ready to serve ham .
  • 1/4 tsp cinnamon .
  • 4 tsps cornstarch .
  • FOR THE HAM .
  • 1/4 c butter .
  • 2 tbsps honey

Directions
  • Step #1 FOR THE HAM: Trim skin & excess fat from ham, leaving about 1/4 inch covering of fat over ham.
  • Step #2 Insert cloves into fat side of ham; place this in roasting pan, fat side up.
  • Step #3 Combine orange juice, wine & orange rind; set 1/2 c aside & pour remaining mixture over ham.
  • Step #4 Set roasting pan on top of stove & bring liquid to boil, then place this in 325°F oven for 1 1/2 hrs, basting every once in awhile.
  • Step #5 Combine reserved liquid, honey, ginger & mustard; stir until smooth.
  • Step #6 Pour over ham & bake for 30 mins, basting every once in awhile.
  • Step #7 Makes about 12 servings.
  • Step #8 FOR THE CHAMPAGNE RAISIN SAUCE: In saucepan, bring 1 c of the champagne & raisins to boil; reduce heat to low & let simmer for 5 mins.
  • Step #9 Dissolve cornstarch in remaining champagne; add to saucepan along with sugar, butter, salt, cloves & cinnamon.
  • Step #10 Cook, until boiling & slightly thickened, stirring, 2 to 3 mins.
  • Step #11 Pour into sauceboat.
  • Step #12 Makes about 3 c enough for 12 servings.
