Ingredients
1 tsp dry mustard .
2 c champagne (divided) .
1 c granulated sugar .
CHAMPAGNE RAISIN SAUCE .
1 c raisins .
1 c white wine .
2 c orange juice .
1/2 tsp salt .
1 grated orange, rind of .
15 whole cloves .
1/4 tsp ground cloves .
1 tsp ginger .
8 lbs semi boneless ready to serve ham .
1/4 tsp cinnamon .
4 tsps cornstarch .
FOR THE HAM .
1/4 c butter .
2 tbsps honey
Directions
Step #1 FOR THE HAM: Trim skin & excess fat from ham, leaving about 1/4 inch covering of fat over ham.
Step #2 Insert cloves into fat side of ham; place this in roasting pan, fat side up.
Step #3 Combine orange juice, wine & orange rind; set 1/2 c aside & pour remaining mixture over ham.
Step #4 Set roasting pan on top of stove & bring liquid to boil, then place this in 325°F oven for 1 1/2 hrs, basting every once in awhile.
Step #5 Combine reserved liquid, honey, ginger & mustard; stir until smooth.
Step #6 Pour over ham & bake for 30 mins, basting every once in awhile.
Step #7 Makes about 12 servings.
Step #8 FOR THE CHAMPAGNE RAISIN SAUCE: In saucepan, bring 1 c of the champagne & raisins to boil; reduce heat to low & let simmer for 5 mins.
Step #9 Dissolve cornstarch in remaining champagne; add to saucepan along with sugar, butter, salt, cloves & cinnamon.
Step #10 Cook, until boiling & slightly thickened, stirring, 2 to 3 mins.
Step #11 Pour into sauceboat.
Step #12 Makes about 3 c enough for 12 servings.
