Honey Almond Granola Recipe

Ingredients
  • 1/2 tsp almond extract .
  • 3/4 c vegetable oil .
  • 1/2 tsp salt .
  • 4 c old fashioned oats, not quick-cooking .
  • 1 tbsp vanilla extract .
  • 1 c nonfat dry milk powder .
  • 1 c raisins .
  • 2 c whole almonds, coarsely sliced .
  • vegetable oil cooking spray .
  • 1 c oat bran .
  • 3/4 c honey

Directions
  • Step #1 Position racks in the upper & lower thirds of the oven & heat oven to 325°.
  • Step #2 Spray two baking sheets with vegetable oil spray.
  • Step #3 In a large bowl mix the oats, bran, & almonds.
  • Step #4 In a smaller bowl, whisk the oil, dry milk powder, almond extract, honey vanilla, & salt.
  • Step #5 Pour the mixture (it will be gloppy) over the oats & stir, with your hands or a spoon, until well mixd.
  • Step #6 Divide the mixture between the two oiled baking sheets & spread in an even layer.
  • Step #7 Bake for twenty mins, stir the granola & switch the positions of the pans.
  • Step #8 Bake until the the oats are golden brown & almonds look well toasted another 10 to 20 mins; don't overcook.
  • Step #9 Let cool completely in the pans.
  • Step #10 The oats may feel soft but will get crisp as they cool.
  • Step #11 When completely cool, stir in the raisins.
