My Thousand Island Meatloaf Recipe

Ingredients
  • 1 tbsp garlic, minced .
  • 1/2 c fine breadcrumbs, unseasoned .
  • 1/2 c thousand island dressing, Kraft .
  • 1/2 c quick-cooking rolled oats .
  • 1 c yellow onions, sliced .
  • 2 eggs .
  • 2 1/4 lbs 93% lean ground beef .
  • 1/2 tsp black pepper .
  • 1 c monterey jack cheese, finely shredded

Directions
  • Step #1 Combine all ingredients thoroughly, with your hands, In a large-ish bowl.
  • Step #2 Pour/plop meat mixture in a NON-STICK standard 9X5 loaf pan, patting it down evenly; if you don't have non-stick pan, then you must spray inside of pan with PAM cooking spray.
  • Step #3 Bake at 375° for 45-60 min (your oven time may vary), starting at the 45min mark, checking for doneness every 5 mins, baking until done.
  • Step #4 Let sit in pan for 10 min before removing & slicing.
  • Step #5 TIP: Excellent for cold meatloaf sandwiches, simply cut into 8 thick slices & put in the fridge until well chilled.
