Strawberry Syrup-canning Recipe Recipe

Ingredients
  • 2 1/2 c sugar .
  • 3 c water, divided .
  • 2 inches lemon peel, pith removed .
  • 2 1/2 quarts strawberries .
  • 3 1/2 c corn syrup .
  • 2 tbsps fresh lemon juice

Directions
  • Step #1 Note:.
  • Step #2 Lemon Peel, pith removed will be 1 2-inch strip.
  • Step #3 Wash strawberries, drain & de-stem.
  • Step #4 Crush strawberries.
  • Step #5 In a medium saucepan mix crushed strawberries, 1 & 1/2 c of water & lemon peel.
  • Step #6 Simmer for 5 mins, stirring often.
  • Step #7 Strain through a damp jelly bag or several layers of damp cheesecloth.
  • Step #8 In a medium saucepan mix sugar & the remaining 1 & 1/2 c water.
  • Step #9 Bring to a hard, rolling boil.
  • Step #10 Add the strawberry juice mixture & corn syrup to sugar syrup.
  • Step #11 Boil for 5 mins, stirring often.
  • Step #12 Stir in lemon juice.
  • Step #13 Ladle hot syrup into sterile, hot jars.
  • Step #14 Leave 1/4 inch head space.
  • Step #15 Wipe rims & adjust caps.
  • Step #16 Process for 10 mins in a boiling water bath at altitudes up to 1000 feet.
  • Step #17 Note: Fruit syrups tend to be thin.
  • Step #18 If you wish for a thicker syrup, in a small saucepan mix 1 c syrup to 1 tbsp cornstarch.
  • Step #19 Bring to a boil cooking until syrup thickens.
  • Step #20 DO NOT ADD CORNSTARCH BEFORE CANNING.
