Bell Pepper Stir-fry Recipe

Ingredients
  • 2 tbsps pineapple juice .
  • 3 medium bell peppers, seeded & cut into strips (any color combination will work) .
  • 2 tsps vegetable oil .
  • 1/4 c soy sauce .
  • 2 tsps cornstarch

Directions
  • Step #1 Combine first 3 ingredients in a small bowl; set aside.
  • Step #2 Coat a wok or skillet with non-stick cooking spray; add oil.
  • Step #3 Place over medium-high heat until hot.
  • Step #4 Add peppers & stir-fry 4 mins.
  • Step #5 Add reserved sauce mixture.
  • Step #6 Cook, stirring constantly until thickened.
  • Step #7 Serve over hot, cooked rice.
