Strawberry Delight Squares Recipe

Ingredients
  • 1 1/2 c honey graham crackers, crushed .
  • 2 tbsps milk .
  • 1 1/2 c cold water .
  • 1/2 c sugar, divided .
  • 2 c boiling water .
  • 2 (8 1/4 oz) cans mandarin orange segments, drained .
  • 6 tbsps butter, melted .
  • 12 oz reduced-fat neufchatel cheese, softened .
  • 1 (6 oz) package sugar-free strawberry gelatin .
  • 1 c Cool Whip Lite, thawed

Directions
  • Step #1 Mix graham crumbs, 1/4 c sugar & butter.
  • Step #2 Press firmly onto bottom of 13x9 inch baking pan.
  • Step #3 Set aside.
  • Step #4 Beat cream cheese, remaining 1/4 c sugar & milk until smooth.
  • Step #5 Gently stir in the whipped topping.
  • Step #6 Spread over crust & put in the fridge.
  • Step #7 Meanwhile, stir boiling water into gelatin until completely dissolved.
  • Step #8 Stir in cold.
  • Step #9 Refrigerate 1 1/2 hrs or until slightly thickened.
  • Step #10 Stir in orange segments & spoon over cream cheese layer.
  • Step #11 Refrigerate 3 hrs or until firm.
  • Step #12 Cut & top this with extra whipped topping if desired.
  • Step #13 If you have a third can of the orange segments (drain) place a segment along side the whipped topping.
