Cilantro-lemon Pesto Recipe

Ingredients
  • salt .
  • 1/3 c pine nuts .
  • 1/2 lemon, juice of .
  • 2 c fresh cilantro .
  • 1/4 tsp black pepper .
  • 1/3 c pecorino romano cheese, shredded .
  • 1/3 c extra virgin olive oil

Directions
  • Step #1 Combine ingredients in food processor/blender.
  • Step #2 Puree until ingredients are fully mixd & the pesto has a smooth texture with no significant lumps (may still be just a little gritty).
  • Step #3 You may add extra olive oil if you like.
  • Step #4 May be served hot or at about room temp.
  • Step #5 Leftovers can be frozen in small tupperware containers or ice cube trays & thawed when you're ready to use.
