Pork With Sweet Onion Marmellata Recipe

Ingredients
  • 1 tsp fresh ground black pepper .
  • 1/4 c olive oil .
  • 2 garlic cloves, minced .
  • 1 tbsp sugar .
  • 1 tbsp sliced fresh thyme .
  • 1 tsp kosher salt .
  • 4 pork chops .
  • 1/4 c sliced fresh flat-leaf parsley .
  • 1/4 c orange marmalade .
  • 1 tbsp sliced fresh rosemary .
  • 2 tbsps balsamic vinegar .
  • 1 tbsp sliced fresh thyme .
  • 1 tsp fresh ground black pepper .
  • 1 tsp kosher salt .
  • 1 tbsp sliced fresh rosemary .
  • 4 large onions, thinly sliced

Directions
  • Step #1 For the onion marmellata, place a large, heavy pot over medium-high heat.
  • Step #2 Add the olive oil & the onions.
  • Step #3 Stir to mix & cook this until starting to sizzle, about 2 mins.
  • Step #4 Add the remaining ingredients.
  • Step #5 Reduce the heat to low.
  • Step #6 Cover up the pot & cook over low heat/flame for 2 hrs, stirring every 30 mins to scrape up any brown bits.
  • Step #7 The onions should be a soft, jam-like consistency & a deep mahogany color.
  • Step #8 Meanwhile, for the pork chops, thyme, salt, mix the rosemary, garlic, & pepper in a small bowl.
  • Step #9 Using your fingers, work all the ingredients together until well mixd.
  • Step #10 Rub the herb mixture over the pork chops.
  • Step #11 Cover up with plastic wrap & reserve in the refrigerator.
  • Step #12 About 20 mins before the onions are finished, remove the pork chops from the refrigerator.
  • Step #13 Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Step #14 Grill the pork chops to medium, about 7 mins a side depending on thickness.
  • Step #15 To serve, spoon the onion marmellata over the pork chops.
  • Step #16 Sprinkle top with the sliced parsley.
  • Step #17 Serve as soon as possible.
