Japanese Fried Chicken Karaage With Onion Ginger Relish Recipe

Ingredients
  • 2 tbsps sugar .
  • 6 tbsps minced green onions .
  • 1/2 tsp salt (to taste) .
  • oil (for frying) .
  • 2-3 tbsps sesame oil .
  • 1 egg .
  • 3-4 tbsps cornstarch .
  • 4 chicken legs (drumstick & thigh section) .
  • Vinegar Sauce .
  • Relish .
  • black pepper .
  • 1/2 tsp salt (to taste) .
  • 3-4 tbsps flour .
  • 2 tbsps minced ginger .
  • 2 tbsps water .
  • 1 tbsp rice vinegar .
  • 2 tbsps minced parsley .
  • 2 tbsps soy sauce .
  • Marinade .
  • 1 tbsp chinese black vinegar or balsamic vinegar

Directions
  • Step #1 Massaging chicken pieces with salt wash under cold running water & pat dry.
  • Step #2 Cut thigh meat (not skin side)in several areas to make leg sections lay flatter.
  • Step #3 Using the dull side of knife, lb slightly to flatten more.
  • Step #4 Make marinade & marinate chicken for 30 mins.
  • Step #5 While chicken is marinating, make vinegar sauce by combining all sauce ingredients & set aside.
  • Step #6 Make relish by combining all relish ingredients & set aside.
  • Step #7 With ample oil in a wok or deep fryer, heat oil to medium.
  • Step #8 Fry chicken turning them often & adjust heat for even frying.
  • Step #9 They are done when nicely browned & crunchy, & no longer red in the center.
  • Step #10 It usually takes about 20-30 mins.
  • Step #11 Remove & cut in long chunks using a cleaver.
  • Step #12 Usually one leg section will yield 4 to 5 cut sections.
  • Step #13 Arrange on large platter & drizzle vinegar sauce over the chicken pieces & arrange a mound of relish on top.
  • Step #14 If using only boneless thigh, cut in half after frying & serve as above.
