Step #3 Add flour & baking soda, beating on lowish speed to mix.
Step #4 Mix in ground nuts.
Step #5 Shape dough into 2 flat rounds; cover with plastic wrap & chill for at least 1 hr.
Step #6 On surface dusted with flour, roll out 1 round at a time to 1/8-inch thickness.
Step #7 With cookie cutter, cut out football shapes (or other shapes as desired).
Step #8 Place 1 inch apart on cookie sheets coated with cooking spray or parchment paper.
Step #9 Using a knife, mark laces on 1/2 of the footballs.
Step #10 These will be the "tops".
Step #11 Bake at 350 degrees F.
Step #12 for 10 to 12 mins or until tops are no longer moist.
Step #13 Remove from cookie sheets & place on wire racks to cool.
Step #14 Place white chocolate chips & shortening in heavy-duty self-sealing plastic bag; microwave on 50 percent power for 3 to 4 mins, massaging bag every min, or until chips are melted.
Step #15 Cut off tip of one corner of bag.
Step #16 Pipe melted white chocolate onto the back of an unmarked cookie; top this with a cookie with laces marked on it to make a sandwich.
Step #17 Decorate the top by piping on extra melted white chocolate to resemble laces on football.
Step #18 Repeat with remaining cookies.
Step #19 Makes 4 to 5 dozen cookies, depending on size of cutter.
Step #20 If you want your dough a bit darker, add a little cocoa to Step 3.
