Apricot Cherry Bars Recipe

Ingredients
  • 8 tbsps unsalted butter, melted .
  • 2 c sliced almonds .
  • 3/4 c light brown sugar .
  • 21 oz sweetened condensed milk .
  • 2 c sweetened flaked coconut .
  • 1/4 tsp salt .
  • 1 c old fashioned oats .
  • 2 c dried cherries (about 10 oz) .
  • 2 c dried apricots, coarsely sliced (about 16 oz) .
  • 1 c all-purpose flour

Directions
  • Step #1 Move a rack to a lower-middle position in the oven & preheat to 325F degrees F.
  • Step #2 Spray a 13"x9" glass baking dish with vegetable cooking spray, & set aside.
  • Step #3 In a medium bowl, mix the flour, oats, brown sugar & salt.
  • Step #4 Stir in the butter with a fork until well mixed & clumps have formed.
  • Step #5 Spread 1 1/2 packed c of this mixture over the bottom of the baking dish, pressing to form a thin crust.
  • Step #6 Mix the coconut, almonds, cherries, apricots & milk In a large-ish bowl, mixing well.
  • Step #7 Pour this filling over the crust, distributing evenly & pressing it down.
  • Step #8 Sprinkle top the remaining oat mixture over the dried fruit filling.
  • Step #9 Bake about 30 mins, until lightly golden, then cool to about room temp on a wire rack.
  • Step #10 Can be stored, covered, at about room temp up to 2 days.
  • Step #11 When ready to serve, cut into 1 1/2" squares.
